Pumpkin Spice Scones

Pumpkin Spice scones are just what every fall brunch needs. These scones are delicious and so easy to make. Serve them slightly warm and your guests will be delighted.

There are several different companies that make Pumpkin Spice Pancake mixes. Pioneer makes a 6 ounce package that is perfect for this recipe. Birch Benders puts theirs in 16 ounce resealable packages, so you can either make a larger batch or save some mix for another time.

Ingredients

  • 6 oz Pumpkin Spice Pancake Mix
  • 1 Egg
  • 1 tbsp Water
  • 2 tbsp Butter
  • Optional: 1/4 cup Chocolate Chips
  • 1 cup Powdered Sugar
  • 2 tbsp Milk
  • 1/2 tsp Vanilla Extract

Instructions

  1. Preheat oven to 375oF.
  2. In a small bowl, whisk together egg and 1 tablespoon of water.
  3. In a separate bowl, add butter into Pumpkin Spice Pancake Mix.
  4. Add egg and fold together until incorporated.
  5. If you are adding optional chocolate chips stir them in gently after the dough is mixed.
  6. Transfer dough to a lightly floured surface and knead 3-4 times.
  7. Roll out ½ inch thick and cut into triangles.
  8. Bake for 12-15 minutes.
  9. Allow to cool slightly before icing.
  10. To prepare the icing, in a large bowl, whisk together powdered sugar, milk, and vanilla extract until even consistency.
  11. Serve iced scones slightly warm.

Tips

Lining your baking sheet with parchment paper helps keep things neat when you are icing your scones. Wait a few minutes for the icing to set before transferring them to a plate.

Substituting Pumpkin Spice Creamer for milk in the icing or adding some semi sweet chocolate chips to your dough are a few fun options to jazz up the recipe.

This recipe makes 4-6 scones. Refrigerate any leftovers or freeze them for later.

To Freeze

  1. Cool the scones completely.
  2. Place them in an airtight container or resealable bag.
  3. Separate layers with waxed paper.
  4. Be sure to use them within 3 months.

Wrapping it all Up
